A bit about us..

Smith Street Distillery is more than just a distillery on Smith Street.  It is the brainchild of multi-award winning master distiller, Jared Smith and Wollongong publicans, Ryan & Nikki Aitchison. Not content to be just another distillery, their ethos is to deliver unprecedented initiatives in sustainability, whilst delivering both accessible, and high-end products to draw Australian consumers away from spirits produced internationally, in favor of local options.


To deliver on their sustainability values, they have rehabilitated a 300m2 patch of derelict land and created an urban farm situated right in Wollongong’s CBD. Using some very savvy composting techniques alongside some hungry hens, they collect organic waste from local hospitality venues which is used to fuel their farmed botanicals, as well as fresh produce that is given back to local venues to form a circular food system.
